It's the name LEVEL5 gives five of these knives (5-182, 5-184, 5-186, 5-192 and 5-194), each sold alongside a standard blade of the same width, and it comes in blue steel and stainless alike. The sources here don't describe what the larger back changes, so the product photos may be the clearest way to compare them. At 10 and 12 in, LEVEL5 offers blue steel or stainless; both 14 in knives are blue steel, and the composite handle comes only on the stainless 5-520 and 5-512 at those two widths respectively. Everything else has a soft grip. Stainless is unavailable at the largest width, so its widest blade is the middle size.

Are some of these more flexible than others?

Perhaps. LEVEL5's page titles mention flex on three: the 5-127 (with Flex), 5-137 (Flexible) and 5-128 (Flexible). No stiffness figure comes with those words, so read them as the maker's description rather than a figure you can compare.
